Havana-Trinidad

HAVANA - 4nights

Day 1: Welcome to Havana! After clearing immigrations and customs, our airport representative lead you to your driver who will transfer you to a private house in the heart of the historic center. *Light lunch and meet and greet with your concierge. *Get your feet wet with an afternoon orientation walk. Just before your dinner enjoy drinks and tapas a new tapas bar in a bustling Old Town street. It's a place to be seen for Cubans and in-the-know expats and tourists. The fish tacos are great and the cocktails amazing! Take a bici taxi transfer until La Guarida restaurant home of the famous cuban film 'Fresa y Cholocate' and one of the most famous and celebrated paladar in Havana.

Day 2: Meet with our local expert guide and walk in the footsteps of Havana's colonial past visiting the four key squares of Old Havana. Light lunch at Salchipizza, an extremely successful bakery, the Unique in Cuba, where Alberto Gonzales Ceballos, a Cuban chef and bread-maker extraordinaire acclaimed in 2007 with a Michelin Starhe, makes not only whole meal bread but 13 other varieties, and also a simple lunch menu. There is a popular meeting place for locals, artists and foreign visitors alike. There you will have the opportunity to interchange with Alberto about his history and to discuss the impact of private businesses on the food quality and diversity in the current Cuba's culinary scene. Afternoon take a panoramic city tour with our expert guide by an open top vintage car. This night you will have a progressive visiting some of the best private restaurants of the city for three times: Starters, Mains and Dessert. After dinner our expert somellier will join you for a pre paid rum tasting and cigar paring.

Day 3: This morning we will leave looking for organic farms and Farm to Table projects. Just outside Havana visit an outstanding organic farm run by the charismatic leader in the sustainability food movement in Cuba. Walking tour around the farm knowing the project's history and enjoy a typical Cuban food at the finca. After lunch depart to the opposite side of the city where you will find a Cuban Farm to Table real experience in an organic farm belonging to a cooperative in the outskirts of Havana. Here you'll learn about farming pigs, alpine goats, rabbits, and poultry; a wide assortment of fruits and vegetables are also grown. Dinner at Mediterráneo Havana restaurant, recognised as the first true experience of a Farm-to-Table restaurant in Cuba. This Vedado restaurant offers excellent food — with a Mediterranean bent — and great seafood. Don't miss the homemade goat's cheese. Then visit some of Havana´s newest and hottest privatly owned bars with our nightlife guide.

Day 4: This morning you will get beneath the surface of Cuba with a food tour. Travel to local markets in Miramar, Vedado, Centro Habana and an Agroponico (organic garden allotment). Buy some fruits/veggies for lunch with talks about urban farming and food supply in Cuba, you'll get a deeper insight into food history. Then go back to a private home for a cooking lesson with our top cuban chef including key Cuban cooking techniques. Afternoon enjoy an authentic afrocuban rumba shows with some african aperitifs. This is a tour for learning about the Cuban religious roots, traditions and ancestral foods but also for starting to comprehend the way in which Christian, Afro Cuban and other saints live together, peacefully, in the same country, in the same cities, in the same houses. It will be a further way to experience, understand and celebrate African ancestral roots in Cuba includding at the end a contemporary culinary interpretation of the simple food served here in slave dwellings during the 17th & 18th centuries. At night, hidden away among fishing shacks on the Jaimanitas River you'll discover Santy where we will dine in our last night in Havana. A fish and superb sushi-based menu is offered by the family of fishermen who own the restaurant and catch the fish daily. Pasta options are served for those who don't wish to eat fish. Then transfer to a private Bar and meet with our experienced bar tender, who will prepare all the cuban traditional cocktails plus any other international ones you might think of.

TRINIDAD - 3nights

Day 5: This morning we depart to Trinidad, on the way we will stop at Cienfuegos for ashort City walking tour before have a lunch at a local paladar in Punta Gorda with spectacular views of Cienfuegos harbour. Our journey continues to Trinidad along 1.5hrs trip. At your arrival our expert guide will explain you the history of the town while visiting its architecture highlights, you will have also insight into its fascinating history in the colonial era, and during the years after the Revolution. Check in and home-cooked and locally sourced dinner at your host's home.

Day 6: Today you will take a tour of the local sugar plantations to understand the slave history in relation to the sugar industry. See slave quarters and understand how this system operated and the enormous impact sugar had on this area. See working plantation homes of the sugar barons. Lunch at Manaca Iznaga before cotinue to Ancon Beach for a relaxing afternoon. Dinner at a seafood restaurant-bar in a traditional colonial house from the 1800s. The owners have lived in Europe and therefore mix a traditional Cuban menu with some European influences. The focus is fresh! Fish caught daily, along with organic meat and vegetables from the local farms, fishermen and suppliers. The food speaks for itself: uncomplicated but prepared exceptionally well. They bring out the natural flavours and always keep it fresh, simple and delicious. La Redacción has history, a great vibe, delicious food, rum fuelled drinks, a band that will have you dancing before you've had a chance to order and most of all the people are welcoming and helpful. Day 7: You'll leave from Trinidad with your local guide and drive 15 minutes outside of the town to the entrance to the Topes de Collantes national park. Climbing up into the Escambray mountains a further 25 minutes you'll arrive at the Guanayara area of the park. From here you will trek trough the tropical forest of Topes. The trek is approximately 3.5 kilometers in total. Hiking 1 kilometer into the park where you can break for a swim at a natural pool and waterfall then a further 2.5kms to the end of the trail where your transport will be waiting. For those who like nature there are ample bird watching opportunities and your local guide will teach you about the endemic species of flora and fauna of this unspoilt moutain park. There are many connections too with the Revolution and it's history in the Escambray mountains and your guide will also impart this history while trekking. We recommend you bring your bathing suit and a towel along. It is also a good idea to bring bottled water and stay hydrated. As mosquitos love this lush vegetation we highly recommend repellant! After the hike you'll travel back down the park to a small ranchon for a typical creole lunch of pork, black beans and rice and be able to converse with your guide in a relaxed setting surrounded by views of the mountains. After lunch you'll return to Trinidad. Relaxing afternoon at Finca Kenia. Dinner time at a recently opened private restaurant run by Trinidad's famous ceramic-makers and where good food and fine service conspire. Fighting hard in a highly competitive field, La Cubita has inventive starters, complimentary salads, some wonderfully marinated brochettes and highly discreet service. For your last night in Cuba we have reserved a tour of the nightlife's hot spots in Trinidad. Accompanied by a local guide you'll get an insiders look into nightlife of the city. Walk around to enjoy the spectacular atmosphere of town at night. Visit a local bar in the city to discover how locals enjoy a typical night in Trinidad. Then a visit to the most popular music venues for tourists and locals alike, Casa de la Trova and Las Escalinatas amongst others. Depending on local events your guide will bring you to concerts by local Jazz or Trova musicians.

Day 8: After breakfast, bid farewell to Cuba and transfer back to Havana airport for board your departure flight.
